Season the chicken with salt and pepper. Heat the butter and the garlic in a frying pan and pan fry the chicken till browned and cooked through. Remove the chicken from the pan.
Pour the lemon juice and the water into the juices in the pan. Stir to mix in the juices and allow to reduce slightly.
Turn the heat down to a lower temperature, and add the butter and allow it to melt into the sauce. Add the cream, the herbs and season with salt and pepper if required.
Add chicken back to the pan and simmer gently till it has heated through and is ready to serve.
