  • 250 gms /8.8 oz riced cauliflower
  • 2 large eggs
  • 1 teaspoon garlic salt
  • ½ cup grated mozzarella cheese
  • 2 tablespoons coconut flour
  • Pinch black pepper


  • Preheat the oven to 200 C/390 F fan forced
  • Mix all ingredients together.
  • Using quality baking paper, create the size bread/base that you require, ie, 2 medium pizza bases or approx 7-8 smaller sizes or a mix of sizes. Divide the batter into mounds required. Using a silicon spatula, gently press the mix into a round shape approx 5mm thick. Use the spatula’s flat edge to push the edge of base gently inwards to create an even edge. Try to make as even as possible. You can create thinner or thicker bases but you may need to vary the cooking time. Do not make them too thin though or they won't hold their shape.
  • Cook the bases for approximately 15 minutes, then carefully flip and continue to cook for approximately 5 more minutes.
  • Remove from the oven. These can be eaten hot straight from the oven or cooled/stored in the fridge or freezer for later use.

To Create a Pizza

  • Simply add your favorite fillings and return to the oven cooking for another 5-10 minutes, until your fillings have been heated through thoroughly and any cheese used has melted .Just remember that it is a fairly delicate base so as a pizza is better suited to eating with a knife and fork.


  • Omit the coconut flour and add ¼ cup almond meal or you can use 2 tablespoons almond meal and 2 tablespoons psyllium husks ground instead.
  • Herb Bread- Add ½ teaspoon of mixed herbs/ Italian herbs or oregano.
  • Naan Bread-Add ½ teaspoon cumin seeds to create Cumin Naan Bread  or ½ teaspoon curry powder for Curry Naan Bread

Additional Serving Suggestions

  • These can be heated up quickly in the microwave or simply fry in a little oil and/or butter till warm (great for when you are using it as Naan bread.)  
  • Heat up and serve dipped in oil and Dukkah as an appetizer or snack. 
  • Use it as a base for your favorite breakfast, ie bacon and eggs
  • Create a ham and cheese toasty by pan frying your assembled toasty in a frying pan in butter until the filling has melted.


To freeze, allow to cool thoroughly and place baking paper between each piece, sealing airtight in a zip lock bag until required. Allow to defrost before heating or using as pizza base.
