Cook on high for 3-4 hours followed by another 3-4 hours on low, or on low for about 8 hours. Cooking time will vary depending on the type of slow cooker you have.
The meat is cooked when it shreds easily. You may need to use scissors to cut the pork in to more manageable lengths. To shred te meat, simply use 2 forks and pull the meat apart.

If the sauce is not thick enough and you want to use it, drain it into a small saucepan. Simmer on high until the sauce thickens and add back in with the meat, or serve it on the side.

If you don't have any salsa on hand, add 200 gms/ 7 oz of diced tomato (sugar free,) 2 tablespoons tomato paste, 1/2 diced onion, 1 teaspoon cumin powder, 1 teaspoon paprika and 1 tablespoon of vinegar to replace the salsa.
