Melt the dark chocolate and the oil in the microwave in bursts taking care not to burn or melt it over a double boiler on the stove top.
Add all of the remaining ingredients and mix well till it comes together. Leave to sit for about 10 minutes.
Roll into teaspoon sized balls and refrigerate until firm.
Drizzle with additional melted dark chocolate and garnish with some dried raspberries.

Roll into desiccated coconut
Roll in unsweetened cacao powder
Dip entire ball into melted dark chocolate
You could use 100 gms/3.5 oz of frozen or fresh chopped raspberries in the recipe but they will have to be kept in the fridge and would only last for approximately 3 days or freeze them.
