Delicious pan fried candied nuts that take just minutes to prepare. Seasoned with cinnamon, vanilla and a dash of spice, these are the perfect healthy low carb sugar free snack.
Heat a heavy based frying pan on a medium heat. Add the coconut oil or butter and the erythritol. Mix in the vanilla extract, cinnamon, cayenne pepper and salt and stir until combined.
Add the nuts and continue to pan fry until the mix starts to darken slightly. It can take from 3-5 minutes. Don't allow to darken too much!
Tip the nuts out of the pan onto a piece of baking paper to cool. Toss them every couple of minutes as they will stick together.
Store in an airtight container for up to 1 week.
Notes
Switch pecans for nuts of choice.Xylitol can be used instead of erythritol in this recipe.
