Instructions
Add strawberries, water and sweetener (if using) in a sauce pan and simmer on a moderate heat for about 10 minutes or until berries are soft enough to mash. If using fresh strawberries you may need to simmer for longer and add a tiny little more water to the pan.
Mash the strawberries with a fork to remove lumps then stir in the chia seeds and a squeeze of lemon juice. Allow to cool before serving.
Store in the fridge for up to 2 weeks.
Taste before you add any additional sweetener.

Notes
