Just wait until you taste these divine tasting Keto Raspberry White Chocolate Muffins. We used to live around the corner from a cafe that was renowned for it’s muffins, in particular their raspberry white chocolate muffins. After receiving some delicious sugar free white chocolate I’ve been trying to create a low carb version. I’m really proud to finally present these absolutely fabulous Keto Raspberry White Chocolate Muffins.

This is another keto recipe that reinforces the point that you don’t have to compromise on the quality of the food you can enjoy when watching your carb intake. The recipe is really simple to make and uses quite simple ingredients and you are all going to love them! You’ll have to hide them from the carb lovers in your house, they are that good. I have a batch in the freezer just waiting to defrost whenever I’m looking for a healthy keto snack.

Sugar Free White Chocolate

I must admit that I have become a bit of a sugar free white chocolate connoisseur lately. The length’s I go to to ensure a recipe tastes amazing….haha. If you haven’t tried Vitawerx white chocolate then you are in for an absolute treat. Vitawerx white chocolate tastes exactly like regular white chocolate but without the added sugar. Not only is the flavor spot on but it is also Malitol free, which isn’t the case for other white chocolate you can buy here in Australia.

Noshu make white chocolate chips and you can generally source them in the supermarket here in Australia. I’ve used Noshu in recipes when I’ve run out of my Vitawerx hoard. It’s fine to use if you must but it isn’t brilliant, especially in comparison to Vitawerx. Vitawerx may be more difficult to source but it is worth the effort. I buy it online in packs of 10 to get the best deal and have it delivered.

Flavor Comparison

There is absolutely no comparison when it comes to flavor, quality and ingredients, when compared to Vitawerx.  Try doing a taste test of the both chocolates and you will see what I mean. Vitawerx is rich and creamy and tastes like quality white chocolate. I find Noshu tastes a little artificial and also contains Malitol, which I try to avoid. Note that I don’t have any affiliation with Vitawerx at all but just appreciate a quality sugar free chocolate

Where to Buy Vitawerx Chocolate

Do yourself a favour and buy Vitawerx chocolate, although be warned as it is delicious and you may struggle to limit how much you eat. I tend to buy it from where I can get the best deal, which is occasionally from the www.vitawerx.com, who ship world wide. I also find that in Australia I often get a good deal on Vitawerx products by shopping around, and https://www.aminoz.com.au/ often have some really deals.

Note that if you are a fan of macadamia nuts, then add a couple of bags of their white chocolate macadamia nuts to your shopping bag for an absolutely delicious treat.

Ingredients

  • 200 gms almond meal/almond flour
  • 40 gms coconut flour
  • ¼ cup monk fruit blend or alternative sweetener - or to taste
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • A pinch of salt
  • 100 gms sugar free white chocolate choc chips or chopped into chunks
  • 150 gms melted butter
  • 2 tablespoons EVOO- extra virgin olive oil
  • 150 ml almond milk or nut milk of choice
  • 4 large eggs
  • 1 teaspoon organic vanilla extract
  • 140 gms raspberries fresh or frozen

Instructions

  • Preheat oven to 165 C/330 F fan forced.
  • Mix all dry ingredients together in a medium bowl including the white chocolate, ensuring it is well combined and the baking powder is well blended.
  • Melt the butter and blend with the olive oil, almond milk and vanilla extract. Whisk in the eggs until well combined. Pour wet mixture into the dry ingredients and mix until really well incorporated. Fold the raspberries gently through the batter.
  • Spoon the mixture into a prepared muffin tray. You can also poke about 4 raspberries into each muffin once spooned into the tray, instead of folding through the batter if desired. This will prevent staining and ensure even distribution of the berries. Smooth the top of the muffins off with a knife. Makes approximately 16 muffins.
  • Bake for between 22-25 minutes or until the the centre of the muffin is cooked. Take care not to overcook.

Variations

  • Omit white chocolate and add equivalent amount of dark chocolate, slivered almonds or chopped macadamias.
  • Increase amount of sweetener, omit sweetener or use alternate sweetener.

Recipe Notes

Eat muffins fresh within 2-3 days or freeze for convenience and defrost as you need. Microwave to defrost for approximately 20 seconds, straight out of the freezer, and they are delicious.
