Just wait until you discover how easy it is to make these delicious Sugar Free Candied Pecans. You simply take a cup of pecans and pan fry them on the stove top with a couple of other ingredients. You can vary the flavors to suit but I add coconut oil (or butter,) cinnamon, sweetener of choice, vanilla extract and a pinch of salt and cayenne pepper. If you wish to make these paleo, you can use coconut sugar in place of the sweetener.

Who would have thought that you could have candied nuts when following a low carb, sugar free or keto way of eating? It’s actually really exciting to come up with new ways to recreate some of the amazing recipes out there, using low carb ingredients. Sometimes I even amaze myself at what can be achieved within the low carb and sugar free sphere.

Variations

These Sugar Free Candied Pecans are pretty darn morish and are a pretty healthy snack to have on hand for when you are feeling peckish. Do try to watch your intake though, as nuts do tend to be higher in calories. The other great thing about this recipe is that you can use whatever nuts you want to. I particularly like to use macadamia nuts in this recipe and find that the flavors go really well together.

Don’t be afraid of using a pinch of cayenne pepper, as it gives the nuts a little kick. They aren’t spicy though if you follow the recipe. You can make them spicier just by adding additional cayenne. There is a spice warning though when it comes to using cayenne, so do use with caution.

Ingredients

  • 1 tablespoon coconut oil or butter
  • 4 tablespoons erythritol
  • A dash vanilla extract
  • 1 cup pecans
  • 1/2 teaspoon cinnamon
  • cayenne pepper
  • A pinch salt

Instructions

  • Heat a heavy based frying pan on a medium heat. Add the coconut oil or butter and the erythritol. Mix in the vanilla extract, cinnamon, cayenne pepper and salt and stir until combined.
  • Add the nuts and continue to pan fry until the mix starts to darken slightly. It can take from 3-5 minutes. Don't allow to darken too much!
  • Tip the nuts out of the pan onto a piece of baking paper to cool. Toss them every couple of minutes as they will stick together.
  • Store in an airtight container for up to 1 week.

Recipe Notes

Switch pecans for nuts of choice.
Xylitol can be used instead of erythritol in this recipe.
