Ingredients

Made simply from almond flour/almond meal, sugar free desiccated coconut, cocoa powder, butter, coconut oil and your favorite sweetener. Feel free to switch the butter for additional coconut oil to create a vegan/paleo version. Coconut sugar can also be used if desired.

If you use a granulated sweetener it may be a little gritty in these Keto Chocolate Coconut Bliss Balls, but I enjoy the texture that it adds. If you want to create a smoother texture, use a powdered sweetener or blitz your granulated sweetener until smooth.

Ingredients

  • cups almond flour/almond meal
  • cup cocoa powder unsweetened
  • cup monk fruit blend or preferred sweetener
  • 1 cup desiccated coconut
  • A pinch of salt
  • 100 grams melted butter
  • 100 grams nut butter of choice
  • 2 tablespoons coconut oil
  • A dash of vanilla extract

Instructions

  • Mix the dry ingredients in a medium bowl.
  • Place the butter, nut butter and coconut oil in a microwave dish and zap until just melted.
  • Add the dry ingredients to the butter mixture and stir until combined. Allow to cool slightly in the fridge for a few minutes.
  • Using a spoon measure, scoop out mixture and roll into balls.
  • Roll in additional desiccated coconut and store in the fridge.

Recipe Notes

Add 1/2- 1 teaspoon of peppermint essence for peppermint chocolate bliss balls.
Add 1/2 -1 teaspoon of orange essence for orange chocolate bliss balls.
If mixture is a little wet, add a small amount of additional almond flour/almond meal. Different brands can absorb varying amounts of moisture.
