Low Carb Creamy Lemon Chicken is a saviour. It provides you with a simple to make dinner, that uses a few basic ingredients, and it tastes absolutely divine. Everyday cooking can be a chore, but when it’s as easy and delicious as this recipe is, some how it doesn’t seem so bad. Serve it with some fresh green beans or asparagus, or your favorite vegetables. Even a simple side of cabbage braised in butter would go really well with this dish. A lovely simple salad on the side would go really well with it as well. Carb it up for family members who aren’t concerned about carbs, by serving some simple boiled potato with butter and parsley to supplement the other vegetables or salad. Everyone is going to love this dish

Tart it Up or Down

Feel free to vary the lemon juice in this to your taste. I am the queen of tart, and love citrus flavors, so I don’t mind a stronger flavor in this Low Carb Creamy Lemon Chicken recipe. Perhaps try a quarter of a lemon and see how you go with the flavor, if you are concerned. I would use all of the zest from one lemon though as it’s pretty subtle in flavor.

You can use chicken breasts in this recipe instead of thigh fillets but bear in mind that breast meat is drier than thigh fillets. My personal preference is thigh fillets, but I’ll leave that up to you.

Ingredients

  • 6 chicken thigh fillets
  • 1 tablespoon butter
  • 2 teaspoons crushed garlic
  • 3-4 tablespoons water
  • rind of 1 lemon and juice of 1/2 lemon
  • 100 gms /3.5 oz butter
  • 4 tablespoons pure cream/ pouring cream
  • 1/2 teaspoon chopped parsley fresh or dried
  • 1/2 teaspoon chopped dill fresh or dried
  • salt and pepper to taste

Instructions

  • Season the chicken with salt and pepper. Heat the butter and the garlic in a frying pan and pan fry the chicken till browned and cooked through. Remove the chicken from the pan.
  • Pour the lemon juice and the water into the juices in the pan. Stir to mix in the juices and allow to reduce slightly. 
  • Turn the heat down to a lower temperature, and add the butter and allow it to melt into the sauce. Add the cream, the herbs and season with salt and pepper if required.
  • Add chicken back to the pan and simmer gently till it has heated through and is ready to serve.
