A classic cocktail, this delicious Low Carb Mojito Cocktail Recipe tastes divine even when there hasn’t been any sugar added to it. This recipe is absolutely perfect for a girls night in, a cocktail party or dinner party or, simply for a refreshing cocktail when you need one. You would never know that this recipe is low carb and sugar free, as it tastes absolutely amazing.

A Mojito is often my cocktail of choice when I am out as it one of the few cocktails that actually tastes ok without any sugar in it. All I do is ask the bar staff to hold the sugar and for a bit of extra lime. Make sure that it is muddled well, and it is a great tasting cocktail. The recipe below will give you the option to hold back on adding any “low carb simple syrup” or sweetener if you prefer.  You can also add it to get a more authentic tasting Low Carb Mojito Cocktail. I generally make up a batch of low carb simple syrup for recipes like this and simply store it in the fridge for up to 2 months.

I also like to use Sweet Leaf drops to sweeten cocktails. Do use them sparingly though as they 2-3 drops is the equivalent of 1 teaspoon of sugar. Sometimes the simple syrup is the better option because it does serve to dilute the alcohol a bit more.

Low Carb Mojito

Low Carb Mojito

Servings: 1 drink

Ingredients

  • 45 ml /1.5 ozs white rum
  • 1/2 lime cut into wedges
  • 8-12 mint sprigs
  • 1/2 cup ice cubes
  • Soda water to taste
  • 3-5 drops Sweetleaf Drops Liquid Stevia or 30 ml/1 oz of Low Carb Simple Syrup- omit if desired

Instructions

  • Squeeze lime from wedges then drop into the glass
  • Add mint and sweetener, if using. *Note that Sweet Leaf drops are very sweet so start off with 3-4 drops if you wish to use them.
  • Muddle (crush for flavor release) using a muddler or end of wooden spoon
  • Add ice and top up with soda water
  • Garnish with a slice of lime and mint leaves

Low Carb Simple Syrup

  • Boil 1 cup of water with 1/4 cup powdered Stevia/Erythritol mix or alternative sweetener, for 5 minutes.
  • Store in a sterile glass jar in the fridge for up to 2 months.
