Diced beef, onions, red or green peppers, some home made Mexican Spice Mix plus a couple of other simple ingredients is all that you need.

Try this dish served simply with Mexican Cauliflower Rice and a Low Carb Tortilla on the side. It also tastes great used in a Mexican Salad Bowl. Make burritos out of it by wrapping it in one of these Low Carb Gluten Free Tortillas. I generally double, triple or quadruple the recipe and simply freeze the left overs. You know my motto is if have food at hand then there is never an excuse for making a bad choice. I also love to maximize the use of my slow cooker so always cook in bulk in it.

Stove Top Method

This recipe can be adapted to use minced meat in place of diced beef and it can also be made on the stove top as well. Cook the mince on the stove top by simply browning off the onion, the mince and the garlic before adding all of the other ingredients. Simmer for approximately 30 minutes prior to serving. I wouldn’t bother making the minced meat version in the slow cooker as it cooks so quickly on the stove top. If you make the recipe on the stove top using the diced meat, you are going to have to simmer the dish for a couple of hours, or until the meat is tender.

Ingredients

  • 500 gms diced steak of choice
  • 1 onion diced
  • 1 red or green pepper diced
  • 2 tablespoons Mexican Spice Mix
  • 2 teaspoons cumin powder
  • 1 teaspoon oregano
  • 1 teaspoon chilli powder- or to taste
  • 400 gms sugar free diced tomatoes
  • salt and pepper to taste
  • 1 tablespoon vinegar or ACV-apple cider vinegar
  • 4 teaspoons garlic crushed

Instructions

  • Add all ingredients to the slow cooker pot.
  • Cook on high for 3 hours and turn down to low for another 3 hours or cook on low for approximately 8-10 hours. Each slow cooker is different so times will vary between slow cookers.
  • The dish is cooked when the meat is at the stage where it is tender and verging on falling apart.

To Serve

  • Serve as part of your favorite Mexican dish,  such as burritos, or in a Mexican Salad. Try some Mexican Rice on the side.
  • Carb it up for carb lovers in your life by adding some heated up red kidney beans, corn kernels or black beans to the dish and serve theirs with rice.
