Low Carb Mexican Slaw is a delicious Mexican take on a classic coleslaw. A refreshing blend of chili, coriander and a squeeze of lemon or lime juice, combined with some classic coleslaw ingredients make this dish a stand out. - ¼ large or 1/2 medium savoy cabbage finely sliced
- 1 red onion chopped finely
- 1 red or green capsicum/pepper chopped finely
- 1 bunch coriander chopped
- 2 teaspoons tspns finely chopped red chilli
- 1 teaspoon minced garlic
- 1 tablespoon EVOO- extra virgin olive oil
- 2 tablespoons mayonnaise or Greek yogurt.
- 1 teaspoon Dijon mustard
- 1/2 teaspoon tspn ground cumin powder
- Juice of 1 lime or lemon
- Salt and pepper to taste.
- Simply mix all of the ingredients together in a large bowl.
