Low Carb Mexican Slaw is a delicious Mexican take on a classic coleslaw. A refreshing blend of chili, coriander and a squeeze of lemon or lime juice, combined with some classic coleslaw ingredients make this dish a stand out. It’s a great coleslaw recipe for BBQ’s to go with grilled meat and fish as well. The thing that I love about coleslaw is the flavors develop over time, so eating slaw for left overs is delicious.

Cabbage is a fantastic cruciferous vegetable that is available all year round. It is generally cheap to buy and it packs a fantastic nutritional punch. Cabbage is really high in fibre and is a great source of Vitamins C and K. It’s a great anti-inflammatory food and high in anti-oxidants, and on top of that, it’s a versatile, low carb vegetable that can taste amazing, especially in dishes like this one.

Use this slaw as a side dish for Mexican food such as burrito’s, tacos and salad bowls. Ingredients

  • ¼ large or 1/2 medium savoy cabbage finely sliced
  • 1 red onion chopped finely
  • 1 red or green capsicum/pepper chopped finely
  • 1 bunch coriander chopped
  • 2 teaspoons tspns finely chopped red chilli
  • 1 teaspoon minced garlic
  • 1 tablespoon EVOO- extra virgin olive oil
  • 2 tablespoons mayonnaise or Greek yogurt.
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon tspn ground cumin powder
  • Juice of 1 lime or lemon
  • Salt and pepper to taste.

Instructions

  • Simply mix all of the ingredients together in a large bowl.
