If you want to use store bought mayonnaise, just make sure that you check out the ingredients that are used. Ideally you don’t want any added sugars and you also want to avoid seed oils such as canola, sunflower, grapeseed etc. Warning though, it is hard to find healthy mayonnaise on the shelf.

- ¼ large or 1/2 medium cabbage finely sliced and/or red cabbage you can also use pre packaged slaw mix
- 1 red onion chopped finely
- 1 red capsicum/pepper chopped finely
- 2 stalks celery finely chopped
- 1 carrot grated- optional if carb watching
- 2 tablespoons apple cider vinegar or vinegar
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 tablespoon chopped chives or parsley
- salt and pepper to taste.
- Simply mix all of the ingredients together in a large bowl until everything has combined and the dressing coats the slaw.
