These chicken wings are absolutely delicious and this is my favorite way to cook chicken wings. So crispy on the outside yet still moist on the inside. The flavor of these is truly amazing.  You really need to try them.

How To Serve Sugar Free Crispy BBQ Chicken Wings

Eat these on their own or serve them with the Sour Cream Dipping Sauce, which also features below in the recipe. Try some celery sticks on the side as well for a traditional touch. If you want a more traditional Ranch Dressing to serve these with, this delicious recipe is also low carb and sugar free.

Why Use Baking Powder in this Recipe

You may be wondering why I add a little baking powder to the chicken. The baking soda actually raises the pH levels in the chicken, allowing the peptide bonds in the skin to break down. This then enables the skin to become more crisp. Feel free to leave out the baking powder as the wings will still really crispen up cooked this way regardless.

Ensure wings aren’t touching on the baking rack to maximise air movement around them for ultimate crispy wings

You can apply this seasoning and cooking method to any chicken or duck recipe where you want the skin to be crisp and brown. Just make sure you use aluminium free baking powder, as some people are really sensitive to the taste of it plus…. who wants to digest aluminium??? Ensure that the baking powder doesn’t clump and is evenly mixed with the spice mix before you use it as well, to avoid mouthfuls of baking powder.

Ingredients

Chicken Wing Ingredients

  • 12 chicken wings or 1 kg chicken nibbles
  • 3 tablespoons BBQ Seasoning Mix reduce to 2 tablespoons for a more subtle flavour
  • 1 teaspoon aluminium free baking powder

Sour Cream Dipping Sauce

  • ½ cup Sour Cream
  • ½ cup mayonnaise
  • 1 teaspoon horseradish
  • ½ teaspoon Dijon mustard
  • 2 tablespoons spring onion or chives finely chopped
  • Salt and Pepper to taste
  • Mix all ingredients together and serve with chicken wings.

Instructions

  • Preheat the oven to 130 C/ 260 F fan forced.
  • Wash and dry the chicken wings if desired. Cut the chicken wings into pieces at each segment discarding the wing tips if you don’t want them. Hint-dislocate the joint to find the right place to cut through.
  • Line a large shallow baking tray with foil. Place a large baking rack in the baking dish and wipe or spray the rack with some olive oil.
  • Mix the BBQ Seasoning Mix plus 1 teaspoon of aluminium free baking powder (not baking Soda!!) together and add to a large zip lock bag. Shake well to combine before adding the chicken bits. Shake and move the bag till the mix has coated the chicken. You can simply use your hands and rub all over the wings.
  • Lay the chicken pieces on top of the cooking rack so they aren’t touching each other and cook in the oven at 130 C/260 F fan forced for 20 minutes. You may need to use to more than 1 pan to fit all of the chicken pieces.
  • Increase the oven temperature to 210 C/410 F fan forced and continue cooking for a further 25- 35 minutes, until the chicken is crispy. If you use 2 pans, rotate them half way through cooking. There is no need to turn the chicken.

Recipe Notes

Serve with dipping sauce and crisp celery sticks.
For a more substantial meal serve with salad, vegetables or a simple slaw.
Omit baking powder if you wish to. They still taste amazing.

    Love this recipe. The dipping sauce is great as well. They taste fried but are oven fried so healthy as well
