Sugar Free Slow Cooker Pulled Pork

Sugar Free Slow Cooker Pulled Pork is a low carb and sugar free variation of a recipe that was given to me by an American friend when we were living in Tokyo (thanks Susan.) It’s a great tasting recipe and very simple to make. What I love about these slow cooker recipes is that you simply put everything into the pot and let it simmer away for hours. They are so easy to make and the end result is certainly well worth the slow cooking time.

How to Serve Sugar Free Slow Cooker Pulled Pork

Try serving this with some Low Carb Tortilla’s,Fresh Tomato Salsa and Mexican Slaw. Add a fresh salad, sour cream and grated cheese, and you have an amazing tasting Mexican meal. Use this recipe in Mexican recipes that require Mexican flavored meat, such as Burritos, tacos, nachos, or in Mexican Salad Bowls. Try using it in Pulled Pork Rolls, again served with Mexican Slaw or even a more traditional Coleslaw.

Alcohol is included in this recipe but if you wish to omit it, it will not really impact on the amazing flavors. There is also no need to add any liquid in place of the alcohol if you do omit it. If you use beer and want this dish to still be low in carbs, make sure you use either a zero carb or low carb beer. Tequila has no carbohydrate in it so it is fine to use if you wish to.

  • 750 gms diced pork/pork tenderloins
  • 2 fresh green chillies deseeded and finely chopped
  • 3 tablespoons minced garlic
  • 1 cup chopped onion
  • 3 tablespoon Mexican Spice Mix
  • ½ cup diced green capsicum/peppers
  • 1 cup Salsa Picante or sugar free salsa
  • ½ can no carb beer- like Big Head in Australia optional
  • ¼ cup tequila optional
  • Salt and pepper to taste



  • Add all ingredients to the slow cooking pot.
  • Cook on high for 3-4 hours followed by another 3-4 hours on low, or on low for about 8 hours. Cooking time will vary depending on the type of slow cooker you have.
  • The meat is cooked when it shreds easily. You may need to use scissors to cut the pork in to more manageable lengths. To shred te meat, simply use 2 forks and pull the meat apart.

Serving Suggestions

  • Use in all Mexican food that calls for shredded meat. Perfect for soft tacos, burritos, enchiladas, tostadas and
  • If the sauce is not thick enough and you want to use it, drain it into a small saucepan. Simmer on high until the sauce thickens and add back in with the meat, or serve it on the side.
  • Mexican Salad Bowls.
  • Great for pulled pork rolls served with delicious Mexican Slaw or a more traditional slaw. 
  • If you don't have any salsa on hand, add 200 gms/ 7 oz of diced tomato (sugar free,) 2 tablespoons tomato paste, 1/2 diced onion, 1 teaspoon cumin powder, 1 teaspoon paprika and 1 tablespoon of vinegar to replace the salsa.
