When I was younger I used to work in a Mexican restaurant and my family used to beg me to bring this home for them after work.I used to make this at work, although it was made with a flour based roux. I tweaked the recipe by removing the flour to create an equally delicious dip.

How To Serve Low Carb Chilli Con Queso Dip

This dip requires gentle heat for cooking and reheating. Take extra care not to brown the onion, capsicum and garlic mixture or the cheesy flavor will be tainted by a smokey garlic/onion taste which will not be good. I love the taste of jalapenos so am fairly liberal with them in this recipe. Feel free to omit them if you want a milder tasting dip. Serve Low Carb Chilli Con Queso warm, as it becomes very firm when cool. If you reheat it, either do it in the microwave or heat it gently on the stove top.

Ingredients

  • 100 gms cream cheese full fat
  • 200 gms sour cream
  • 100 gms grated cheese
  • ½ green capsicum/green peppers finely diced
  • ¼ onion finely diced
  • 2 teaspoons minced garlic
  • 1 tablespoon butter
  • 1-2 teaspoons jalapenos drained

Instructions

  • Gently saute garlic, green pepper/capsicum and onions in butter till soft.
  • Stir in cream cheese till soft and creamy then add sour cream
  • Add grated cheese stirring till blended.
  • Stir in Jalapenos and serve warm.
