This delicious, meal in an instant dish is one of my favorite meals to have when I am on my own so I have based this recipe on one serving because of this. If you want to make more serves simply increase multiply the ingredients by the number of servings that you need to suit. I always have frozen prawns in the freezer and chives in the garden and generally have zucchini in the fridge, which is how and why I came up with this deliciously simple recipe. Zucchini and prawns go so well together.

This dish takes no time to make and the flavor is amazing. I never miss eating pasta when I get to eat meals like this. I tend to use 1 medium zucchini for a serve of zoodles which equates to about 150-200gms/approx 7 oz. Please adjust the amount you zoodle based on whether you require more or less. A large eater may require a lot more.

Cooking Your Zoodles

When it comes to cooking zoodles, I don’t like my zoodles overcooked. I would generally cook them for about 1-2 minutes so they are still “al dente”, and not overcooked. Zucchini comprises of a lot of water, so they can become watery if they are overcooked so do take care and please cook them how you prefer them.

You can make this a little more creamy by adding a dash of heavy or pouring cream to the dish. And of course, don’t forget to top it with delicious freshly grated Parmesan cheese.

This is one of those amazing dishes that shows simple food at it’s best. The end tasting result doesn’t seem possible with the small amount of time and effort required to pull this dish together. Zucchini and prawns are just made for each other.

Ingredients

  • 200 gms zoodles
  • 100 gms fresh/frozen prawns
  • 1/2 clove minced garlic
  • 1 teaspoon chopped chives or parsley
  • 1/2 tablespoon butter
  • 1/2 tablespoon olive oil
  • salt and pepper to taste

Instructions

  • Cook the garlic off in the butter and olive oil taking care not to brown. Add the prawns and saute till just cooked
  • Add chives and salt and pepper to taste.
  • Add the zoodles and saute for 2-3 minutes until el dente.
  • Serve topped with shaved Parmesan cheese.
