This delicious Low Carb Cream Cheese Icing recipe creates a delicious, creamy icing. This tastes amazing served as frosting on top of this Low Carb Carrot Cake . You wouldn’t know it was low carb at all. It’s a divine cake and suitable for any occasion. It’s probably my favorite low carb cake recipe (followed hot on the heels by the Chocolate Zucchini Cake mentioned further on in this article.)

Ingredients

  • 250 gms /9 oz Full Fat Cream Cheese
  • 75 gms / 2.5 oz Butter
  • 1/2 cup Swerve or 2 tablespoons granulated sweetener ground to powder
  • 1/2 tspn vanilla extract

Instructions

  • Beat room temperature cream cheese and butter until well combined and creamy.
  • Add all other ingredients and continue beating until light and creamy.
  • Variations
  • Add 1/4 cup cocoa/dutch processed cocoa or cacao for Chocolate Cream Cheese Icing
  • Add juice of 1/2 lemon for Lemon Cream Cheese Icing- add rind as well if desired
  • Add 1/4 cup Sugar Free Lemon Curd for delicious Lemon Curd Cream Cheese Frosting
  • Add 1-2 tablespoons pure cream/ pouring cream with other ingredients for a softer icing/frosting.

Recipe Notes

Suitable to frost a large single layer or double layer cake or a large batch batch of muffins or cupcakes.
You can freeze this frosting but for best results use within 3 months.
Note that for best results ensure that your sweetener is in powder form otherwise it will be gritty.
