Raspberry Dark Chocolate Bliss Balls…. these are the bomb!

Two of my absolute favorite flavors are raspberries and dark chocolate. Combine these flavors and I really don’t think you can mess it up. These decadent bliss balls taste absolutely divine and would make a absolutely delicious snack but are actually special enough to be able to serve up at a dinner party.

Dried , Fresh or Frozen Berries

You could omit the chia seeds if you wanted to but I think they go really well with the flavors so try them before you change the recipe. If you struggle to find dried raspberries you can buy them from iHerb. Dried raspberries go a long way so don’t be tempted to add any extra to the recipe. You could use 100 gms/ 3.5 oz of frozen or fresh chopped raspberries in the recipe but they will have to be kept in the fridge and would only last for approximately 3 days.

Low Carb Raspberry Dark Chocolate Bliss Balls

Ingredients

  • 100 gms dark chocolate- 75% Cacao or more- recipe used 85%
  • 80 gms almond meal
  • 60 gms desiccated coconut unsweetened
  • 75 gms cream cheese
  • 25 gms dried raspberries chopped
  • 2 tablespoons chia seeds
  • 2 tablespoons coconut oil
  • Pinch of salt

Instructions

Melt the dark chocolate and the oil in the microwave in bursts taking care not to burn or melt it over a double boiler on the stove top.

  • Add all of the remaining ingredients and mix well till it comes together. Leave to sit for about 10 minutes.
  • Roll into teaspoon sized balls and refrigerate until firm.
  • Drizzle with additional melted dark chocolate and garnish with some dried raspberries.

Variations

  • Roll into desiccated coconut
  • Roll in unsweetened cacao powder
  • Dip entire ball into melted dark chocolate
  • You could use 100 gms/3.5 oz of frozen or fresh chopped raspberries in the recipe but they will have to be kept in the fridge and would only last for approximately 3 days or freeze them.
