Fresh vs Dried

I have used onion and garlic powder in this recipe, as using them fresh in such a hot oven can cause them to brown too much and dominate the flavor of the dish. Feel free to try fresh ingredients if you would prefer. I also like to make these quite crunchy. If you would prefer them cooked a little less, simply reduce the cooking time to suit. You could also reduce the oven temperature slightly.

Sugar in Balsamic Vinegar

This recipe contains balsamic vinegar, which a lot of low carb and Keto advocates don’t like to use because it contains sugar. I use it sparingly in my cooking and find that by the time you divide the amount of balsamic used by the number of serves, it ends up being not very much sugar or carbs per serve. If you wan’t to omit it or reduce the amount that is used then please do so. The balsamic vinegar adds a delicious slightly caramelized flavor to the dish and is a real highlight of the recipe.

Oven Roasted Brussel Sprouts with Balsamic

Cook Time: 30 minutes
Total Time: 35 minutes

Ingredients

  • 400 gms Brussel sprouts
  • 2 tablespoons EVOO- extra virgin olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon balsamic vinegar

Instructions

  • Preheat oven to approximately 200 C/400 F fan forced
  • Trim the brussel sprouts and cut in half lengthwise.
  • Toss the sprouts in the onion and garlic powder till well distributed and then stir through 1.5 tablespoons of the EVOO.
  • Spread out on a baking tray and cook in the oven for approximately 25-30 minutes, turning them halfway through cooking.
  • Just prior to them being cooked to your liking (less time for a less crispy result,) blend the balsamic vinegar with the remaining EVOO and drizzle over the sprouts.
  • Cook for a further 3-5 minutes and serve.
